Breakfast Club pancakes (the low carb option)

Quite simply, here's the recipe without a whole spiel about how I don't usually like pancakes but then I found this recipe and my life changed bla bla bla... Usually you have to scroll down pages for it.... Enjoy!! (and remember that almond flour pancakes aren't too sweet so it's all about what you put on it: melted butter, creme fraiche, berries, dark chocolate, sugar free caramel sauce... obviously be as creative as you want to be.)
1 1/4 cup almond flour
1/4 cup melted butter
3 eggs (room temperature)
1/3 cup double cream (room temperature) - can use milk if you prefer
1 teaspoon baking powder
1 capful of vanilla essence
Make sure your wet ingredients are at room temperature so that the butter doesn't solidify when mixed together with cold cream or eggs.
Beat them together adding the baking powder and almond flour as you mix to avoid clumps.
Spoon out, or pour your pancake mixture in a pan on the hob, into the shapes you require, and cook as usual. Don't flip them more than once (potentially twice) each side as the almond flour doesn't stay fluffy when turned too many times.
Then, garnish, flourish and top as you wish. Enjoy!
